Can a certified check be canceled by the person who requested it? - check credit guaranteed loan no

I just sold my car to someone who has one car, loans from your credit union. I deposited the check into my bank, but was told all the usual fund is to 18, later than 3 days are available. I've never done before one can stop a certified check? It was written by your body, and I had written my name on it. I just want to make sure that all monies to be there somewhere and will not stop. I was told that certified checks are guaranteed.
